Recipe No. 1 - Egg n Crispy Tortilla breakfast bowl

This breakfast is considered to be a poor mans breakfast.. you get a lot of protein and a full belly before heading to your busy day at work..

Serves 4
Ingredients:

8 corn tortillas
1/4 onion 
4 eggs
4 strips of bacon
salt
pepper
olive oil

optional:

salsa
chicken bouillon

First heat up 4 tbsp of olive oil into a med pan
- take the tortillas and cut into small pieces (like 10 pieces per tortilla) set apart
- slice onions into thin pieces

Toss the onions into the hot olive oil until golden brown
Add the tortilla pieces, do not pile up try to fry them in one layer.... when they start looking a little brown mix them (add a dash of chicken bouillon) up until there all a little crispy, set the temperature at medium and let simmer for a minute. 

Mix all the eggs together in a bowl. 
- move the tortillas to the side of your pan and add some oil... once the oil is hot add the egg to the side of the tortillas and wait until the eggs are slightly cooked. 
- Mix the eggs with the crispy tortilla and onions(add salt and pepper to your taste) until its all fully cooked. 

Cook the bacon in a separate skillet.... you could get the fully cooked microwavable one... Or buy turkey bacon and microwave for 2 mins.. (healthier and crispier)

--Place in eggs tortilla mix in a bowl (top with salsa if desired)
 - add big cuts of bacon to the side and Listo!
